PINEAPPLE CREAM CHEESE PIE
RECIPE
...a great pineapple pie recipe to try !

INGREDIENTS
  • 1 (8 in.) pie shell, graham or regular pastry baked
  • 1 (20 oz.) can pineapple crushed canned in its own juice not in syrup
  • 8 oz. cream cheese
  • 1/2 c. sugar
  • 1/2 pt. heavy cream

INSTRUCTIONS
Drain pineapple and keep juice. Whip thoroughly the cream cheese, sugar and 2 tablespoons of the reserved juice. Add the pineapple. In a separate bowl whip the cream until stiff and fold into cheese mixture. Fill pie shell and refrigerate for 6 hours or even overnight. The pineapple pie recipe is ready to serve...

COCONUT TOPPED FRESH PINEAPPLE PIE

COCONUT TOPPED FRESH PINEAPPLE PIE RECIPE

INGREDIENTS
  • 2 eggs
  • 3/4 to 1 c. sugar
  • 3 tbsp. all purpose flour
  • 1 1/2 tbsp. lemon juice
  • 4 c. diced fresh pineapple
  • 9 inch pie crust, unbaked
  • Coconut topping

INSTRUCTIONS
Beat 2 eggs slightly; mix in 3/4 to 1 c. sugar, depending on sweetness of pineapple. Add flour and lemon juice. Fold in pineapple.
Fill an 9 inch, unbaked pie crust with pineapple mixture.
Bake at 375 degrees for 35 minutes. Remove and cover evenly with coconut topping. Return to oven and bake about 20 to 25 minutes more, until topping is brown. Serve warm or at room
temperature.

COCONUT TOPPING:

Beat 1 egg with 1/3 cup sugar until sugar dissolves. Mix in 1/2 teaspoon vanilla, 2 tablespoons milk. Fold in 2 1/4 cups flaked coconut.

INGREDIENTS
  • 2 c. sifted powdered sugar
  • 1 stick butter, softened
  • 2 large eggs
  • 1/8 tsp. salt
  • 1/4 tsp. vanilla
  • 2 baked 9 inch pie crusts

INSTRUCTIONS
Cream together powdered sugar and butter on electric mixer. Add eggs, salt and vanilla. Beat until light and fluffy. Spread mixture evenly into baked pie crusts then chill.

INGREDIENTS
  • 1 c. heavy cream
  • 1/2 c. sifted powdered sugar
  • 1 c. crushed pineapple (well drained)
  • 1/2 c. chopped nuts
Whip cream until stiff, blend in powdered sugar. Fold in pineapple and pecans. spread this mixture on top of base mixture and chill thoroughly.
The pineapple pie recipe is ready to serve...great taste ! Nice pie !

TONY'S BLACK'S PINEAPPLE PIE RECIPE

INGREDIENTS
  • Pastry for 2 crust pie
  • 1 c. sugar
  • 1 tsp. salt
  • 3 tbsp. cornstarch
  • 1 #2 can crushed pineapple, including juice

INSTRUCTIONS
Cook sugar, salt, cornstarch, and pineapple in a saucepan over medium heat; stir constantly until thickened. Boil one minute. Pour into pastry-lined pie plate. Quickly cover with top crust which has slits cut in it. Bake at 425 degrees for 25-30 minutes. Delicious! Enjoy the pineapple pie !

Mix the crushed pineapple (including juice), sour cream and vanilla instant pudding. Pour into the pie crust and refrigerate until pie sets, approximately 6 hours. The pineapple pie recipe with cream is ready to serve...enjoy the pie ! Nice taste !

ANDY'S PINEAPPLE PIE

ANDY'S PINEAPPLE PIE ...a great pineapple pie recipe to try !

INGREDIENTS
  • 1 20 oz can crushed pineapple (drained)
  • 1 small box vanilla instant pudding mix
  • 1 tsp. lemon juice
  • 1 deep dish pie shell

INSTRUCTIONS
Preheat oven to 350°F. Mix together pineapple, vanilla pudding mix, and lemon juice until smooth. Prick pie shell. Pour mixture into pie shell.
Bake at 350 for about 20 minutes or until crust is golden.
Cool completely before serving. Serve with a dollop of Cool Whip on top. The pineapple pie recipe is ready to serve....enjoy the pie....nice !
